Ingredients: (for 15-20 crepes)

For the dough:

flour — 155 g
milk — 250 ml
water — 125 ml
baking powder — 1 tsp
yeast — 1 tsp
sugar — 1 tbsp

For the filling:

cheese — 100 g
fresh mushrooms — 200 — 300g
onion — 1 piece
salt, pepper

1. First of all prepare the dough.
Activate the yeast. Dissolve in warm water sugar and yeast, stir and leave for 10 minutes alone.
After 10 minutes pour in the yeast mixture to the warmed milk
and pour the sifted flour and baking powder
stir with a whisk until smooth. Batter will be quite liquid.
Leave it for 20 minutes.

2. Filling:

Fry onion lightly and then add the chopped mushrooms, season with salt and pepper
Roast for about 15 minutes (until tender or the liquid evaporation)
Grate the cheese on a small grater
Have a good warm up the pan than it is not pre-oiling (this is mandatory!).
In the centre, pour in 2.5 tbsp of dough.
3. Fry until the pancake is covered with holes, and its surface will not dry.
