Meringues-island with chocolate

2 protein (warm! if you take out of the fridge, separate the whites from the yolks and let them stand for 5 minutes at room temperature)
70 grams of sugar (sugar and protein should be 1:1 by weight, a standard weight of protein — 35 grams)
30 grams of dark chocolate
150 grams of cherries

Meringues-island with chocolate

Beat the whites to soft peaks, gradually add sugar. Continue to beat until you have a smooth, shiny mass.

Chocolate to break into small pieces (it is convenient to do it in a mortar, mix with protein mass, pour it into 4 ramekins and bake in the microwave for exactly 30 seconds at maximum power.
Cool slightly. Cherry grind in a food processor in a watery puree. Meringue spread on a saucer and pour the cherry puree.
