Cake «bird’s milk»


4 PCs. egg whites,
2 -3 tablespoons powdered sugar ( to taste)
lemon juice 2 tbsp,
20 gr. gelatin,
2-3 tbsp cocoa
2 cups milk,
powdered sugar or sugar to taste (I put 2 tbsp full with top)
10 g of gelatin.

1. Proteins beat until thick foam, add Mar. powder, gently pour in the lemon juice. Gelatin pre-soak for an hour in water to heat and cool slightly, then very carefully, thin stream pour into proteins, whisking at the same time.
2. Cook cocoa, and boil for 5 minutes to slightly thickened. Gelatin pre-soak for an hour in water, heat and pour in cocoa.
3. Part cocoa pour in the form, give slightly «take» in the fridge, then spread on it a layer of proteins, put into the fridge for 15 minutes, then lightly heated the remaining cocoa and pour the last layer. Put into the fridge for an hour and a half. Before submitting the finished dessert turn upside down. If you want you can sprinkle with dry cocoa.
